The Baked and Burnt (Off-Menu)

Osteria Cucina Rustica has been in my rotation for years — and there's a reason for that. The food is fresh, the quality is consistent, and the fact that owner Steve Botta is a friend doesn't hurt either. This is the kind of neighborhood spot where the kitchen actually cares.

I walked in craving pasta. I also walked in fully aware that pasta at my age is a negotiation — extra carbs, extra calories, extra reason to skip dessert. Fine. I was ready to pay the tab.

Then Steve did what good owners do, even from a distance.

He texted me:

"I'm away but you can tell the waiter 'the baked and burnt' and they will make it. I also have a new one with baked shells filled with lobster and baked the same way."

An off-menu dish name straight from the owner? That's not a suggestion. That's an order.

I told the waiter. He blinked, paused, then nodded like a guy who's been in the business long enough to know when to just trust the process. Always a good sign. The best dishes usually start with a waiter looking mildly confused.

What came out was outstanding.

Despite the name, it's not actually burnt — it's baked to that perfect edge, the same crispy, caramelized corner you fight your family for on a tray of lasagna. The rigatoni had structure: crispy shell, molten center, sauce clinging to every ridge like it had somewhere to be. Every bite was the good bite. There was no filler bite. That almost never happens.

I didn't get to the lobster-stuffed shells this round. That's a next-visit problem, and I'm already planning the visit.

So here's the deal: if you go, ignore the menu for one course. Look the waiter in the eye and say "the baked and burnt." Then get out of the way.
